Our luxurious style of Bonito Flakes consists of vertical shavings against the fibers, which is also called Mild-Kezuri. It has the silky/soft texture since it cuts against the muscle fibers and is great for "Okaka" or seasoned bonito flakes. Excellent for Izaka-ya, bento-shop, and deli style dishes.
